Happy #SuperfoodSaturday! Meet our star of the superfood show: pomegranates!
Pomegranates are filled with all sorts of vitamins and antioxidants that can reduce inflammation, treat sore throats, help clear up skin, cure stomach problems, and so much more.
But that's not the only powerful produce in today's superfood serving. We're spreading the fresh fall vibes with a little bit of sweet and a little bit of savory, topping our pomegranates onto another nutrient-rich item: sweet potatoes!
The above photo is really all you need: as many sweet potatoes as your heart desires, one seeded pomegranate, a handful of coconut flakes, and a couple lime wedges!
Then simply bake/heat up your sweet potatoes, cut them to your pleasing (or just slice them open like a baked potato) and garnish with your toppings.
And voilà! The finished product. 😋
