Quick-Pickled Watermelon Radishes
- 2 watermelon radishes
- 2 tbs. sugar
- 3 cloves of garlic
- 1 tbs. whole peppercorns
- ¾ c. white vinegar
- Tightly pack 2 sliced radishes, 2 tbs sugar, whole peppercorns, 3 cloves of garlic, and ¾ cup white vinegar into a mason jar
- Tap the jars on the counter to release any air bubbles and top off the jar with water if you do not want them to have a strong vinegar taste and if any radishes are exposed.
- Place the lids on the jars and screw on the rings until they are tight. Leave the jars in the fridge for 24 hours before tasting.
