Quick-Pickled Watermelon Radishes


  • 2 watermelon radishes
  • 2 tbs. sugar
  • 3 cloves of garlic
  • 1 tbs. whole peppercorns
  • ¾ c. white vinegar


  1. Tightly pack 2 sliced radishes, 2 tbs sugar, whole peppercorns, 3 cloves of garlic, and ¾ cup white vinegar into a mason jar
  2. Tap the jars on the counter to release any air bubbles and top off the jar with water if you do not want them to have a strong vinegar taste and if any radishes are exposed.
  3. Place the lids on the jars and screw on the rings until they are tight. Leave the jars in the fridge for 24 hours before tasting.
