Spanish Marinated Manchego With Citrus and Rosemary

This stunning recipe is best if it's made a few days ahead, so all you have to do is plate it when your guests arrive. Simply make a citrus and garlic infused olive oil, add some shrubbery in the form of gorgeous rosemary, and pour it over cubes of Manchego cheese.

5 ingredients, and you are on your way to holiday party heaven. Totally seasonal, very festive, and incredibly delicious. 

Ingredients

  • 1 head of garlic, cloves separated and peeled (about 12 cloves)

  • 1 small orange, quartered through stem end, thinly sliced crosswise, seeds removed, skin kept on

  • ½ cup extra-virgin olive oil

  • 3 sprigs rosemary

  • Kosher salt

  • 1 lb. Manchego cheese, cut or broken into ¾" pieces

  • For serving: 1 small baguette, sliced and toasted

Directions

  1. Cook garlic, orange, and oil in a small saucepan over medium heat, stirring occasionally, until garlic starts to turn golden, 10–12 minutes.

  2. Remove from heat and add rosemary sprigs. Season with salt and let cool.

  3. Pour garlic mixture into a medium bowl, add cheese, and gently toss to coat cheese.

  4. Cover and chill at least 12 hours before serving.

  5. Serve with toasted bread.
